Roasted Garlic

- Recipe -

/ whole heads of garlic / olive oil / sea salt / lemon /

Preheat the oven to medium.

Slice the top off of the heads of garlic and leave everything else intact.  Rub a bit of lemon juice, salt, and even a bit of sugar on the top of the head, (the exposed garlic), if you wish a more distinct caramelazation.

Place garlic in a small baking dish, something close to their original size.  The only thing to watch out for hear is that the garlic doesn’t dry out.

Bake it for 45 minutes until soft on the inside.  When ready, serve the whole head.  Guests can grab individual cloves and squeeze from the bottom for a ready made garlic paste.

Toast a nice bread, spread a bit of butter, then garlic.  Sprinkle with salt.
